Casatella is a unique fresh cheese: it is creamy, it melts in the mouth and has a sweet, light taste. In the lactose-free version, it is made with pasteurised cow’s milk, selected enzymes, salt and vegetable rennet from wild thistle, so while you have no lactose, you still have all the flavour and goodness!

What do you know about wild thistle?
The vegetable rennet used in our range of lactose-free cheeses is obtained from the thistle (Cynara Cardunculus L.): this is a very special plant because it preserves all the flavour and wholesomeness of our specialties. And it is ideal for vegetarians.
